Homemade Tomato Sauce

Serves: 3 cups

This recipe should be a staple in everyone recipe repertoire. A good tomato sauce can be used in so many recipes, I like to keep it simple and I hope you enjoy this as much as I do.

Ingredients

  • ½ brown onion diced

  • 3 fat cloves garlic finely chopped

  • 1 tsp fresh oregano (1/2 tsp dried)

  • 5 basil leaves

  • salt / pepper

  • 2 tbsp good extra virgin olive oil

  • pinch sugar

  • 1 large tin whole plum tomatoes

Instructions

  1. Add olive oil to a heavy based pan and add the onions and garlic

  2. Cook on a low heat until the onions are soft, about 6 -7 minutes

  3. Add the herbs and tomatoes and leave to simmer gently with a lid on for about 40 minutes

  4. Making sure you give it stir every now and then

  5. Add seasoning and the pinch of sugar to take the edge off the acidity in the tomatoes

  6. Once the sauce has reduced and is lovely and thick it is ready to serve on whatever you like

  7. I always like to add some extra fresh basil when serving and a good helping of parmesan!

PS – I always make at least double this so I can freeze some for another day #beingamum
