Malaysian nasi goreng, which is a simple fried rice, usually served with a whole fried egg on top.
Ingredients
2 cups (approx. 250g) cold cooked rice
2 cloves garlic minced
1 tsp belacan
1 or 2 red chillies finely chopped
1 shallot finely chopped
handful green beans chopped
2 tbsp cooking oil
2 tbsp kicap manis
2 eggs whisked lightly (1 extra for serving)
pinch white pepper
1 tsp sesame oil
2 spring onions chopped for serving
Tip – if you can’t be bothered to chop everything just add the garlic, chillies, shallots to a blender and whizz up with a dash of oil to make a paste.
Instructions
Start by getting your wok nice and hot
Add the belacan first and dry cook it without any oil to bring the flavor out
It will turn quite crumbly and this will only take 30 secs
Add the cooking oil, sesame oil, minced garlic, chilli and shallot
Stir quickly for 1 minute, add the green beans
Stir fry quickly for another 30 seconds and then push to one side of the wok
Add the egg and let it cook like an omelette on the bottom of the pan
Once the egg is nearly cooked through add the cooked rice and stir everything together
Add the kicap manis, pinch of white pepper
Serve hot with an extra fried egg on top if you like and sprinkle the spring onions to finish
Notes
The main thing to remember when cooking this dish is to have all your ingredients ready to go into the wok. Once you start cooking it will all cook very quickly.
