Chilli Halloumi and Quinoa Salad

A delicious quinoa salad with grilled halloumi
Ingredients
Halloumi:
1 x 250g block of halloumi
1 fresh chilli or a pinch of chilli flakes
1 clove garlic
Sprinkle of oregano
Olive oil
Quinoa Salad:
½ – 1 cup dry Quinoa (depending how hungry you are)
¼ cup chopped cucumber
¼ cup chopped cherry tomatoes
¼ cup chopped sundried tomatoes
¼ cup sliced artichokes
1tbsp chopped coriander
1tbsp chopped mint
1tbsp chopped flat leaf parsley
Dressing:
½ lemon juice
1 tbsp olive oil
pinch salt / pepper
½ tsp honey
Instructions
Start by marinating the halloumi
Simply cut the clove of garlic in half and rub all over the cheese
Add the chopped chilli or chilli flakes, oregano and a dash of olive oil over the top
Leave this to one side while you make your salad
Cook your quinoa
Add the quinoa to a pan of boiling water or stock
You need lot’s of water as it expands, so roughly 1 cup of dry quinoa to 4-5 cups water is a good measurement
Leave to simmer for 15 – 20 mins until soft and expanded and then drain and shake out all excess water
Pop into a large bowl, add all the salad ingredients and herbs and mix together
Mix all the ingredients for the dressing together and pour into the quinoa
Now your ready to cook the halloumi
Heat a griddle pan or frying pan and place your slices of halloumi in
Leave for 1 minute, turn, cook the other side for about 1 min then it’s ready to serve warm on top of your salad of quinoa.
