Try out this gorgeous recipe for Ikan Bakar. A Malaysian BBQ or grilled fish dish that can be cooked on the BBQ. Full of exotic flavors from South East Asia your friends will be super impressed!
Ingredients
Marinade:
2 big shallots
2 cloves garlic
3 fresh lime leaves
1 tsp dried shrimp paste / belachan ( or 1 tsp fish sauce as an alternative)
1 inch piece ginger
½ tbsp turmeric powder
1 tbsp brown sugar
salt and pepper to season
2 – 3 fresh red chillies
2 whole large mackerels (could use seabass, trout, monkfish or squid even, whatever fish you fancy)
Banana leaves to wrap fish in / or tin foil
Instructions
Blitz all the ingredients for the marinade together in a food processor until a smooth paste
Using a sharp knife cut some slits into the fish skin - score it
Smear paste all over your fish
Wrap the fish up either using banana leaves or tin foil
Leave to marinade for ½ hour
Cook it on the BBQ to give a lovely smoked flavor
or you can simply cook it in the oven
The fish should only take 10 – 15 minutes to cook on the BBQ depending how hot it is
You can tell the fish is cooked if the flesh has become flaky and it comes away from the bone easily, also if the flesh has turned opaque it’s cooked!
