Fresh Mee Goreng Noodles with Stan Frazier

Ingredients

  • For the Fresh Noodles:

  • 3 1/2 cups of plain flour (you can use 00 flour too)

  • 4 extra large eggs

  • dash of water

You can buy fresh egg noodles if you don't have time to make fresh ones yourself. 

  • For the Mee Goreng:

  • 2 tbsp vegetable oil

  • ½ small onion, sliced

  • 3 cloves garlic, chopped

  • 4 oz bok choy or other green vegetable, cut into large chunks

  • Handful of bean sprouts

  • 2 eggs

  • 1 chicken breast cut into thin strips (or use any left over chicken and shred it)

  • 2 tbsp ground peanuts

  • Noodle sauce mixture to combine together:

  • 1 tsp chilli flakes

  • 1 tsp sugar

  • 1 tsp dark soy sauce

  • 2 tbsp Chili Sauce (Sriracha is a good one)

  • 2 tbsp oyster sauce

 

  • To serve / garnish:

  • Bunch of spring onions, finely sliced

  • 1 tbsp crisp-fried shallots

  • Lime wedges, to serve

Instructions

  1. Pasta / noodle making

  2. Using a large board or work surface, pile the flour into a heap and make a well in the center

  3. Crack the eggs into the well

  4. Using a fork start to incorporate the flour into the eggs, breaking the yolks and mixing it all together

  5. This bit can get a bit messy so work quickly mixing flour flour and eggs together

  6. Then you can get your hands dirty and start bringing it all together and kneading it, adding a tablespoon of water to make it into a firm ball of dough

  7. Wrap the dough in cling film and leave to rest on the work surface for 1/2 an hour

  8. Once rested you can start to roll it out, either using a rolling pin or a pasta machine

  9. We used a 1/4 of the dough to make the noodles which was enough for 2 people

  10. You can re wrap the dough and keep it in the fridge for another day and another recipe depending on how many people your cooking for

  11. You’ll need some extra flour to sprinkle on your board or rolling pin

  12. Roll out the dough until it’s nice and thin

  13. Either using a knife or the thin spaghetti cutter on the pasta machine, cut into noodles

  14. Leave on a lightly floured surface until your ready to cook

  15. Get a large pan of salted hot water ready

 

  1. Mee Goreng

  2. Get all ingredients ready and chopped before cooking

  3. Make sure your water is boiling for the fresh noodles

  4. To begin, place a wok or a large skillet on a high heat

  5. Once hot, add the oil and the chicken breast and cook for about 2 minutes until white and nearly cooked through

  6. Add the garlic, onions, stir fry for 30 seconds, then add the green veg and stir fry for 10 seconds

  7. Now dunk the noodles into the boiling water for about 10 seconds

  8. using a slotted spoon shake off excess water, or drain quickly and toss into the wok

  9. Give a good stir to mix the noodles in, pour in the sauces mix well

  10. Push the noodle mixture to one side of the wok to clear a space

  11. Break the eggs into the space and stir fry until almost cooked

  12. Add the ground peanuts and bean sprouts, and mix all together

  13. Serve with a sprinkle of spring onions and fried shallots and big squeeze of lime juice
