decadent brownies with added salted caramel
Ingredients
Brownie mixture
185g ¾ cup unsalted butter
200g best dark chocolate
½ cup / 60g plain flour
¼ cup / 40g cocoa powder
3 large eggs
¾ cup / 150g white caster sugar
¾ cup / 150g soft brown sugar
½ cup extra dark chocolate chips
For the Caramel
75g / 1/3 cup caster sugar
50 ml / ¼ cup double cream
10g / small knob of butter
1 tsp sea salt flakes
Equipment needed
baking tray lined with greaseproof paper 8 inch by 8 inch
small pan for caramel
1 larger pan for the brownie mix
Instructions
Pre – heat oven to gas 4 / 180c / 350f
To make the caramel –
Pour the sugar into a small pan with the heat on low
Leave it to melt and try to avoid stirring as it can crystallize and go a bit lumpy
Once the sugar has all melted and gone golden brown take it off the heat
Add the cream a bit at a time and stir quickly, add the butter and keep stirring until it is all mixed in
it will sizzle and if your not quick enough the sugar will turn hard before the cream has had a chance to blend in
To make the brownie-
Heat the butter, sugars, and chocolate very gently on a low heat in a larger sauce pan
Keep stirring until it has all melted – Warning – do not leave it without stirring as chocolate can burn very easily!!!
Once melted, take off heat
Leave to cool for 5 minutes
Beat in your eggs one at a time, add the flour and cocoa
Beat well together until it has gone silky and glossy
Tip in the chocolate chips and stir together
Pour into your lined baking dish
Put spoonfuls of caramel all over the top and swirl around a bit so every chunk of brownie will have some caramel
Pop into your pre heated oven for 25 – 30 minutes
It will be ready when a crust has formed on the top and it’s fairly firm to the touch
You can poke a skewer in and if it comes out with bits on that is fine as the brownie is supposed to be slightly gooey still
Leave to cool on a wire rack, cut into cubes and ENJOY!!!!
