Ingredients
2 cooked chicken breasts – shredded
3 spring onions, finely chopped
2 tbsp coriander chopped
2 tbsp mint chopped
2 tbsp dried fried onions
2 tbsp toasted sesame seeds
2 tbsp lime juice
1 tbsp fish sauce
2 tsp fresh ginger finely chopped
1 red chilli finely chopped
1 tbsp honey/ agave syrup
Instructions
Shred the chicken meat by pulling apart with your fingers
You can either buy already cooked chicken breast
or just pop 2 fresh chicken breast onto some foil add a drizzle of sesame oil, wrap it up and put it in the oven for 15 -20 minutes until cooked through - this will steam the meat
Put the shredded meat, spring onions, coriander, mint, onions, and sesame seeds in a large bowl and mix together
In a separate little bowl add the lime juice, fish sauce, ginger, chili and honey and mix together
Pour dressing over the chicken salad and mix together then serve with either brown rice or a big green salad
