Rice n Peas

This dish traditionally goes with Jerk Chicken but it is also just a wonderful side dish to make for any occasion. A yummy way of cooking rice...
Ingredients
  • 2 cups of rice
  • 1 onion chopped
  • 2 cloves of garlic chopped
  • Few fresh sprigs of thyme
  • 1 tsp dried thyme
  • Salt
  • Pepper
  • 1 can of kidney or gungo beans, drained
  • 1 tbsp jerk seasoning
  • 2 cups coconut milk
  • 2 cups water
  • ½ tbsp sunflower oil
Instructions
  1. Heat a little oil in a heavy based / non stick pan add the onions and garlic
  2. Fry for 2 minutes or until soft, then add the jerk seasoning and rice
  3. Stir into the onions; add the thyme, salt and pepper and beans
  4. Stir all in and then add the coconut milk and water
  5. Turn the temperature to as LOW as possible and leave to simmer with a lid on for about 30 minutes
  6. Give a stir just once or twice to make sure it’s not sticking to the bottom
Notes
Note: to make this dish healthier use brown rice and reduced fat coconut milk
