This dish traditionally goes with Jerk Chicken but it is also just a wonderful side dish to make for any occasion. A yummy way of cooking rice...
Ingredients
- 2 cups of rice
- 1 onion chopped
- 2 cloves of garlic chopped
- Few fresh sprigs of thyme
- 1 tsp dried thyme
- Salt
- Pepper
- 1 can of kidney or gungo beans, drained
- 1 tbsp jerk seasoning
- 2 cups coconut milk
- 2 cups water
- ½ tbsp sunflower oil
Instructions
- Heat a little oil in a heavy based / non stick pan add the onions and garlic
- Fry for 2 minutes or until soft, then add the jerk seasoning and rice
- Stir into the onions; add the thyme, salt and pepper and beans
- Stir all in and then add the coconut milk and water
- Turn the temperature to as LOW as possible and leave to simmer with a lid on for about 30 minutes
- Give a stir just once or twice to make sure it’s not sticking to the bottom
Notes
Note: to make this dish healthier use brown rice and reduced fat coconut milk
