Sweet Pea and Parsley Soup

If you’re a fan of peas you’re going to love this easy-to-make warming soup.  

Ingredients

  • 2 packs of frozen peas 

  • 2 stalks of celery chopped

  • 1 onion chopped 

  • 1 cup / Large handful of fresh parsley 

  • 1 liter Vegetable stock

  • 2 oz butter 

  • 1/2 cup of cream 

  • 1 tsp honey

  • Optional toppings a sprinkle of cheese or some crisped up bacon or pancetta. 

  • Salt and pepper to season 

Method:

In a large pan add the butter, chopped onion and celery and cook until soft. Add the frozen peas and vegetable stock with salt and pepper.  Leave to simmer for 10 minutes. Turn off the heat and let it cool slightly. 

Add the fresh parsley, honey and cream and blend until smooth.  Taste for seasoning, add more salt if needed and pour into bowls.  Serve with a sprinkle of cheese, I like some crumbled feta cheese on top, and also a sprinkle of crispy pancetta if you eat pork.
