Turkey Tacos
This is a lower fat version of normal tacos as I use ground turkey instead of ground beef. Turkey is high in protein and tastes great in a taco. This is a fun meal to cook for the family, and let everyone make their own tacos.
Ingredients
Serves 4
10 – 12 Corn tortillas – GF / or flour tortillas
1 lb ground Turkey
1 brown onion diced
1 tbsp olive oil
2 tsp paprika
1 tsp cumin
1 tbsp pure cocoa powder
3 cloves garlic finely chopped
1 ½ cups water
2 tbsp tomato paste
Serve with:
1 cup cilantro sliced
2 cups lettuce sliced
1 cup grated cheese
1 avocado sliced
1 cup sweetcorn
1 cup cherry tomatoes sliced
Equipment needed
large frying pan to cook turkey
another frying pan to heat tacos- or how ever you normally heat them.
Chopping board,
wooden spoons
Method:
Heat the olive in a pan and add the chopped onions, garlic, paprika and cumin
Fry together until the onion is soft, 2-3 minutes
Add the ground turkey and cook for a further 5 minutes
Add the tomato puree, water and cocoa powder and stir together
Leave to simmer gently for 20 minutes, the liquid will have evaporated mainly leaving a thick sauce covering the ground turkey
Heat up the tacos, and serve the ground turkey in a bowl on the table with the rest of the filling ingredients.
