Sweet Potato, Chicken, Avocado and Rocket Salad

Roasted sweet potatoes and chicken call for a substantial salad that will fill you up and keep you healthy. I make this as a great side dosh sometimes and leave out the chicken
Ingredients
1 large sweet potato
1 ripe Hass avocado
1 packet rocket 300g
100g roasted pistachios roughly chopped
handful of chopped basil
1 or 2 cooked chicken breast sliced
Dressing:
3 tbsp avocado oil
1 1⁄2 tbsp balsamic vinegar
1 tsp honey
1 tsp dijon wholegrain mustard
pinch rock salt / black pepper
Instructions
Preheat oven to 190c / gas 5
Scrub sweet potatoes, leaving skin on and slice into 1cm thick round slices
Spread on a baking tray, sprinkle with olive oil, salt and pepper
Roast in a hot oven for 25- 30 minutes or until soft and slightly caramelised
Take out and leave to one side to cool.
Combine dressing ingredients together
Wash rocket thoroughly and shake out.
Place in a large bowl with basil and toss
Add the sweet potatoes, chicken, slices of ripe avocado and sprinkle pistachios over the top
Lastly drizzle the dressing over
