Sweet Potato, Chicken, Avocado and Rocket Salad

Roasted sweet potatoes and chicken call for a substantial salad that will fill you up and keep you healthy. I make this as a great side dosh sometimes and leave out the chicken

  • Ingredients

  • 1 large sweet potato

  • 1 ripe Hass avocado

  • 1 packet rocket 300g

  • 100g roasted pistachios roughly chopped

  • handful of chopped basil

  • 1 or 2 cooked chicken breast sliced

 

  • Dressing:

  • 3 tbsp avocado oil

  • 1 1⁄2 tbsp balsamic vinegar

  • 1 tsp honey

  • 1 tsp dijon wholegrain mustard

  • pinch rock salt / black pepper

Instructions

  1. Preheat oven to 190c / gas 5

  2. Scrub sweet potatoes, leaving skin on and slice into 1cm thick round slices

  3. Spread on a baking tray, sprinkle with olive oil, salt and pepper

  4. Roast in a hot oven for 25- 30 minutes or until soft and slightly caramelised

  5. Take out and leave to one side to cool.

  6. Combine dressing ingredients together

  7. Wash rocket thoroughly and shake out.

  8. Place in a large bowl with basil and toss

  9. Add the sweet potatoes, chicken, slices of ripe avocado and sprinkle pistachios over the top

  10. Lastly drizzle the dressing over
