My friend from Maine, whoppie approved these delightful little treats. They are half between a chocolate cake and a cookie and have a marshmallow center. Quite drool worthy.
Ingredients
Whoppie Pie Mix:
125g / 10 tbsp butter
200g / 1 ½ cups brown sugar
2 eggs
1 tsp vanilla
240g / 1 ½ cups self raising flour
20g / ¼ cup cocoa powder
½ cup / 125ml milk
2 tbsp red food coloring
Filling:
100g unsalted butter
200g icing sugar sifted
150g marshmallows / or a jar of marshmallow fluff spread
2 tsp vanilla
Instructions
Preheat oven to gas 5 / 190c / 375f
Beat the butter and sugar until light and fluffy
Beat in the eggs one at a time and then the vanilla and milk
Sift in the flour and cocoa and fold in until combined
Drop a tablespoon of the mixture into blobs (or pipe them on) onto your lined baking tray
Pop into the oven for 8 minutes
They will be spongy when cooked
Take off the tray and place on a wire rack to cool. Make sure not to over cook them!
Filling:
If you can’t get hold of any marshmallow spread in a jar, gently melt ½ a bag of marshmallow’s on a low heat in a sauce pan and leave to cool.
Beat the butter and sugar together until fluffy
Add the vanilla and melted cooled marshmallows
Beat until mixed together and smooth.
Once the baked whoppies are cooled you can fill them with the marshmallow frosting and put another whoppie on top to make a sandwich
