This recipe is a very easy version of how to make your very own homemade lemon curd. Once cooked you can pour it into an airtight container or jar and keep it in the fridge for up to a month -yum! As well as being great on toast, lemon curd can be used in many a dessert.
Ingredients
6 tbsp / 75g unsalted butter
1 cup / 190g sugar
2 large eggs
2 egg yolks
2/3 cup /160ml lemon juice
2 big tsps. grated lemon zest
Instructions
Using an electric whisk beat the butter and sugar together until soft
Add the eggs and egg yolks
Beat well together
Then pour in the lemon juice and beat. It will look curdled but that is fine
Transfer into a small saucepan and put on to heat on a low temperature
Keep stirring until it looks smooth
increase heat to medium and cook without letting it boil until it thickens up, 5-7 minutes.
Once it’s thick transfer to a bowl
Place some clingfilm over the top and leave to cool down
Once cool you can start using and eating it
