Latkes are potato pancakes traditionally served during the Jewish celebration of Hanukkah - and they are delicious!
Ingredients
2 cups peeled and finely grated raw potato
½ white onion finely shredded
1 egg
good pinch of salt / pepper to season
2 tbsp matzo meal or flour
oil for frying – canola / sunflower
To serve:
sour cream
apple sauce
Instructions
Place grated potatoes in a sieve and squeeze out as much liquid as possible
Add to a bowl and mix in all the other ingredients
I always use my hands to mush everything together
If you see more liquid coming out this is probably because of the salt so drain any excess liquid off
Heat enough oil to cover the bottom of your frying pan by ½ cm
Test the oil to see if it is hot enough by dropping a tiny piece of potato in
If it sizzles quickly then it’s ready to cook
The heat needs to be medium to high
The objective is to get them crispy of the outside and creamy and fluffy in the middle without burning them!
Place a large spoon of the potato mix into the pan
You can cook maybe 2 or 3 at a time depending on your pan size
Make sure you don’t overcrowd the pan or they won’t cook as well
Once it is golden on one side flip them and cook the other side
This should only take about 2 minutes each side
Drain on a paper towel to get rid of any excess oil
Serve hot with apple sauce and sour cream – great combo!
