Halloumi Skewers with Thyme, Lemon and Chilli

These tasty vegetarian BBQ skewers are something different and healthy for any BBQ party, plus your vegetarian friends will really love you.

Ingredients

  • 1 block of halloumi cut into chunks

  • 1 red onion

  • 2 courgettes

  • 1 red pepper

 

  • Paste:

  • 1 tbsp fresh thyme

  • 1 red chilli

  • pinch salt

  • pinch pepper

  • ½ juice lemon

  • 1 clove garlic

  • 2 tbsp olive oil

 

  • Equipment:

  • Skewers

  • BBQ / griddle pan

Instructions

  1. Cut all your vegetables and halloumi into chunks that will fit nicely onto your skewers

  2. Not too big not too small - about ¾ of an inch If you want to get precise, would be perfect

  3. Using a pestle and mortar if you have one, pound the thyme, garlic and chopped chilli, salt and pepper

  4. Add the lemon juice (bit of the zest too if you like a tang) and olive oil, mix to a paste

  5. You can also use a blender to make the paste

  6. Put all the veggies and halloumi into a large mixing bowl

  7. Pour the paste over and leave to marinade for ½ hour or longer

  8. Skewer up and grill on a nice on BBQ or griddle pan for 5 – 6 minutes

  9. Or until the halloumi is just beginning to go soft and gooey
