Probably one of my favorite dips - a fresh, homemade guacamole. Avocados are so good for you and packed full of essential and healthy vitamins and fats to keep your skin looking young, and your body feeling good. My guacamole has a kick to it so leave out the jalapenos if you don't want it spicy, and make sure you have nice ripe avocados!
Ingredients
2 large ripe hass avocados
1 tbsp chopped red onion (or brown is fine)
1 big clove garlic finely chopped
1 tbsp coriander freshly chopped
1 ripe lime
¼ tsp salt and pinch of pepper
¼ tsp cayenne pepper
¼ cup chopped cherry tomatoes
½ green jalapeño finely chopped
Instructions
Peel and de stone the avocados
Cut into large chunks and place into a large bowl
Cut the lime in half and squeeze over the avocado
Toss to make sure all the avocado is covered as this helps to stop it discoloring.
Add the salt, pinch of pepper and cayenne pepper
Mash together with a fork or potato masher - depending how smooth you want your guacamole Using a spoon fold in the rest of the ingredients
Finally squeeze the last half of the lime juice over the guacamole and stir in
Serve straight away with either some vegetables to dip in or corn chips
