This super healthy green soup is made with just plenty of green veggies, I used peas so it wouldn't be too bitter, and also a dash of coconut milk to make it creamier but without using dairy.
Ingredients
1/2 head broccoli
1/2 pack baby spinach leaves (2 cups)
1 large leek
4 cloves garlic
2 cups cooked peas
4 cups vegetable broth
salt and pepper to taste
handful of parsley leaves
1/2 cup coconut cream / milk
1 tbsp olive oil
Instructions
Wash all the veggies, and roughly chop the garlic, leeks and broccoli into small chunks
Cook the peas and drain
Heat the olive oil gently in a large frying pan, add the garlic, leeks and broccoli
Saute for 5 minutes
Add the spinach and let it wilt slightly
Add the veggies to a blender, with the remaining ingredients and whiz until smooth
You’ll probably have to do this in 2 batches to be safe!
Serve while still hot
