This is a delicious dessert made with black glutinous rice, coconut milk, palm sugar and flavored with pandan leaves. Very simple and comforting, a bit like an Asian rice pudding.
Ingredients
3/4 cup black glutinous rice
5 – 6 cups water
1/2 cup palm sugar (or brown)
1/2 cup coconut milk
2 x pandan leaves
Instructions
If you can soak the rice in a bowl of water overnight it will take less time to cook, but if you can't just soak the rice for a couple of hours before.
Drain soaked rice, add to a large sauce pan the 5 cups of water and bring to the boil.
Tie the pandan leaves in a knot and add into the rice
Turn down to simmer for approx 40 minutes
Giving stir every now and then to make sure it’s not sticking
Heat needs to be gentle and low to cook slowly.
Once the rice is cooked and soft, and nearly all the water has evaporated it is done!
You can add more water if its too dry and you prefer it runnier
Now you can add your palm sugar and stir together. If you like it sweeter just add more sugar :)
Serve into bowls and let people pour their own amount of coconut milk in
