Asian Chicken BBQ Marinade

This is a simple marinade full of fresh herbs, coconut and spices which will go very well with most meats for the BBQ

Ingredients

500g Chicken / Beef / Pork

  • Marinade:

  • 2 stalks lemon grass, outer leaves removed

  • 2 inch piece ginger, skin off

  • 3 cloves garlic

  • 2 birds eye chillies

  • 2 big red chillies

  • 2 spring onions

  • small handful of fresh coriander / cilantro

  • 2 tbsp oil

  • pinch salt

 

  • Soy dipping sauce:

  • 2 tbsp kicap manis (sweet dark soy sauce)

  • pinch black pepper

  • 1 tsp chili sambal (or chili sauce, or a finely sliced birds chili)

  • juice of ½ fresh lemon

Instructions

  1. To make the marinade simply blitz all the ingredients together in a food processor until smooth

  2. Pour over your chicken thighs or meat and leave to marinade for 2 hours or overnight if you can

  3. Cook on the BBQ, or even in a hot oven, or grill..

  4. Serve with a soy and chili dipping sauce

  5. Yum!
