White chocolate, Pecan and Pumpkin Spice Cookies

The perfect fall cookie with white chocolate, pecans and pumpkin spice.  These would be a real baking treat at Thanksgiving! 

Makes 12

  • Cookies:

  • 1 stick/ 115g butter melted

  • 3/4 cup / 150g  brown and white sugar, half of each. 

  • 1 egg

  • 1 tsp vanilla

  • 1 ½ cups / 180g all purpose flour

  • ½ tsp baking powder

  • ½ cup pecans

  • pinch salt 

  • ¾  cup white chocolate chips / or cut up chunks 

 

  • Topping

  • 1 tsp pumpkin pie spice powder

  • 1 tbsp brown demerara sugar

Method:

Beat the melted butter and sugars together until fluffy

Add the vanilla and egg and beat again lightly for a few seconds until mixed together

Beat in the flour, salt and baking soda until just combined, it will be a soft sticky dough mixture 

Fold in the white chocolate chips

Mix the pumpkin pie spice and demerara sugar together in a small bowl

Place about a tablespoon heap of the cookie dough onto a baking tray, spread evenly apart so they don't cook into each other

Sprinkle each ball of dough with a little of the spice and sugar mix

Push 2 or 3 pecans on the top of the cookie

Place into your pre heated oven for 8 -10 minutes, they will look just golden and puffed up when they are done, be careful not to over cook them of they will lose their soft gooey center

Leave on on the tray for a couple of minutes to set before moving them to a wire rack to cool down
