You don’t have to be vegan to make these truffles btw, they are so delicious and much healthier than regular truffles that they should be for everyone. I used avocado instead of cream, and I didn’t add an extra sugar or sweeteners. Apart from tasting delicious they are super easy to make – added bonus! I hope you enjoy these as much as I do.
Ingredients
Chocolate Truffles
1 medium ripe avocado approx ¾ cup
10 oz pure dark chocolate 70% (if vegan use chocolate with no milk fats)
½ tsp vanilla
pinch salt
Coatings:
desiccated coconut
chopped pistachios
chopped almonds
chopped hazelnuts
cocoa powder
Instructions
Gently melt the chocolate in a bowl over a pan of simmering water
Once melted, leave to one side to cool slightly
Scoop the avocado into a bowl, add the pinch of salt and mash it to a fine pulp
Add to the melted chocolate with the vanilla and mix gently together
(if you like your chocolates not too bitter, add a small tbsp of caster sugar and stir in)
Pop in the fridge to set for 1 hour, or until it’s all firm
You can get your coatings ready while it is chilling
Next step is to roll the chocolate into balls
Scoop about 1 small tbsp and quickly roll it in the palm of your hands into a ball
Then roll in which ever coating you want.
Continue this until you have used up all the chocolate
Keep chocolates in the fridge and eat within 2 days
