Turmeric Scrambled Eggs, with Spinach and Ghee

Ingredients

Serves 2

  • 4 eggs

  • ½ cup soy milk (Or whichever milk you prefer)

  • 1 tbsp ghee

  • ½ cup sliced onion

  • ½ tsp turmeric powder

  • ¼ tsp cumin powder 

  • 2 cups / handfuls of baby spinach leaves

  • Pinch of salt / pepper

Method:

Make sure you rinse the spinach leaves to make sure there is no grit left.  Whisk the eggs and milk together in a bowl with a pinch of salt and pepper.  Heat the ghee in a large frying pan, add the sliced onions, turmeric and cumin powder and cook until the onions are soft.  Add in the spinach leaves and cook until the leaves are wilted.  Push the spinach and onions to one side and pour the eggs in.  Leave the eggs to settle on the bottom and then scramble them by stirring every now and then.  Once they are nearly cooked through and firming up, stir the spinach and onions in.

Serve up piping hot.
