Chicken and Cashew Nut Stir Fry

Thai basil, chicken and cashew nut stir fry. Simple, quick and delicious dinner recipe

Ingredients

  • 2 chicken breasts sliced into thin strips

  • 1/2 packet of green beans

  • 1/2 red pepper, cut into slices

  • 2 cloves garlic chopped finely

  • 1 handful of fresh Thai basil (or normal if you cant get Thai)

  • 1 tsp five spice powder

  • 1 large onion sliced

  • 2 tbsp pure oyster sauce – no MSG!

  • 1 tbsp soy sauce

  • 1 chili (optional)

  • Handful of roasted cashew nuts

Instructions

  1. Heat a little oil in a large wok, when hot

  2. Add the sliced chicken and stir fry until it turns white and is nearly cooked (about 3 minutes)

  3. Add the garlic, five spice, onion, and green beans

  4. Stir-fry together until the beans are soft and cooked through

  5. Add the red pepper and chili, then lastly add the oyster sauce and soy sauce

  6. Once it has all been mixed together chuck in the fresh basil and cashew nuts

  7. You're ready to serve on a bed of steamed rice
