Spicy Tuna Roll

Sushi is very simple to make, but you do need to have a rolling mat, but then you get to make sushi as much as you like. Spicy tuna roll is easy and delicious, just make sure the fish is very fresh and the best quality you can get.
Ingredients
- 4 ½ cups of Cooked and seasoned Japanese Rice
- 400g Sushi grade tuna
- 1 x Ripe avocado
- ½ cucumber cored and sliced into long thick strips
- 2 tbsp Japanese Mayo
- 1/2 tbsp sriracha chilli sauce
- 1 tsp black sesame seeds
- 1 tsp white sesame seeds
- 4 x sheets of toasted seaweed – Nori (3/4 length)
- Equipment:
- Bamboo rolling mat
- Very sharp knife
- Cling film
- Bowl of water for keeping hands wet
Instructions
- Start by prepping all your ingredients for the filling:
- Slice the cucumber, slice the avocado and squeeze some lemon juice over the top to stop it discoloring
- To make your tuna simply dice it into tiny cubes ad place in a small bowl
- In another small bowl mix the mayo and sriracha together to make a spicy mayo sauce
- You can now add half of this to your tuna and mix together
- IF it’s spicy enough for you leave as it is, if not you can add an extra bit of sriracha
- For this sushi roll we want to have the rice on the outside
- Place your nori onto a clean and dry work surface
- Take a ball of rice about the size of your palm, I have small hands so approx. a cup’s worth
- Place onto the nori and flatten along one side
- Using your finger tips, lightly spread the rice down evenly over the entire piece of seaweed
- Sprinkle with the black and white sesame seeds
- Turn this rice side down on to your bamboo mat which has been covered with clingfilm
- On the lower 1/3 of the seaweed add the fillings - cucumber, avocado and spicy tuna mix
- place them in a line across the seaweed neatly
- using both hands and the mat, flip the seaweed and rice side up and over the fillings firmly and continue to roll the sushi
- You should now have a log shape
- Using a very sharp knife cut into even pieces and serve
