The perfect afternoon tea treat, the classic scone served with jam and cream
Ingredients
350g self-raising flour , plus more for dusting
¼ tsp salt
1 tsp baking powder
100g butter , cut into cubes
3 tbsp caster sugar
115 ml milk
1 tsp vanilla extract
beaten egg , to glaze
jam and clotted cream , to serve
Instructions
Heat oven to 220C/fan 200C/400 f / gas 7
Tip the flour into a large bowl with the salt and baking powder, then mix
Add the butter, then rub in with your fingers until the mix looks like fine crumbs
Stir in the sugar
Mix milk and vanilla together
Make a well in the center of the mixture and pour the milk in and mix together using a fork
When the mixture is turning into big lumps you can bring it all together with you hands into a ball of dough
Be careful not to over handle the dough, in fact the less you handle it the better
Lightly flour your work surface and rolling pin and roll dough out until about 1 cm thick
Using a pastry cutter cut into rounds and place onto a baking tray
Brush the top with the egg and pop straight into the pre heated oven for 10 minutes or until golden on top and risen
Eat warm or leave to cool and then eat the same day with a big dollop of jam and clotted cream.
