Roasted Cauliflower Soup

I could eat roasted cauliflower all day, so I decided to make a warming soup, which also happens to be vegan and gluten free too! This is a perfect appetizer for the Holiday Season parties or staying in on a chilly autumnal night. I use a bit of curry paste to give it a kick.

Ingredients

  • 1 medium head cauliflower cut into small florets

  • ½ big brown onion roughly chopped

  • 2 cloves garlic roughly chopped

  • 2 tsp Thai red curry paste

  • ½ can coconut milk

  • 2 tbsp coconut oil (or olive oil)

  • salt / pepper seasoning

  • 1 lime leaves

  • 3 / 4 cups vegetable broth

Instructions

  1. Mix the cauliflower with 1 tbsp of oil and salt and pepper

  2. Place on a baking tray and pop in the oven for ½ hour or until crisp and browned

  3. While that is cooking add the other tbsp of oil to a pan

  4. On a low heat add the onions, garlic and curry paste and cook until soft, 3-4 minutes

  5. Add the roasted cauliflower, veg broth and leave to simmer for 20 minutes

  6. Take off the heat and stir in the coconut milk

  7. Once cooled slightly, add to a blender and whiz until smooth.

  8. Season to taste and you are ready to serve

Notes

This is great to make a day ahead and keep in the fridge ready to whip out for your Thanksgiving feast or dinner party.
