I could eat roasted cauliflower all day, so I decided to make a warming soup, which also happens to be vegan and gluten free too! This is a perfect appetizer for the Holiday Season parties or staying in on a chilly autumnal night. I use a bit of curry paste to give it a kick.
Ingredients
1 medium head cauliflower cut into small florets
½ big brown onion roughly chopped
2 cloves garlic roughly chopped
2 tsp Thai red curry paste
½ can coconut milk
2 tbsp coconut oil (or olive oil)
salt / pepper seasoning
1 lime leaves
3 / 4 cups vegetable broth
Instructions
Mix the cauliflower with 1 tbsp of oil and salt and pepper
Place on a baking tray and pop in the oven for ½ hour or until crisp and browned
While that is cooking add the other tbsp of oil to a pan
On a low heat add the onions, garlic and curry paste and cook until soft, 3-4 minutes
Add the roasted cauliflower, veg broth and leave to simmer for 20 minutes
Take off the heat and stir in the coconut milk
Once cooled slightly, add to a blender and whiz until smooth.
Season to taste and you are ready to serve
Notes
This is great to make a day ahead and keep in the fridge ready to whip out for your Thanksgiving feast or dinner party.
