This date bread is lovely and moist as the dates make it a bit sticky, and the walnuts add a bit of crunch. This is a traditional sweet cake made during Ramadan in Malaysia.
Ingredients
1 1/2 cup / 300g chopped pitted dates
125g butter unsalted butter room temp
1 1/2 tsp. baking soda
1 cup / 240ml boiling water
1/2 cup / 100g brown soft sugar
1/2 cup walnut halves
2 eggs
1 ½ cups / 200g plain flour
1/2 tsp. baking powder
1/2 tsp. salt
Instructions
Preheat an oven to 350ºF. 180c Grease and flour a 1-lb. loaf pan
In a large bowl, add the dates, butter, sugar and baking soda
Pour in the boiling water, stir well and let stand for 15 minutes
Beat the eggs into the date mixture, then sift the flour, baking powder and salt in
Finally add the walnuts and beat together lightly until everything is blended
Pour the batter into the prepared pan and bake until a toothpick inserted into the center of the loaf comes out clean, 45 – 50 minutes.
Transfer the pan to a wire rack and let cool for 15 minutes
If you want a sticky topping then pour couple of tablespoons of golden syrup over it while it’s warm and leave it to cool.
