Spicy Portuguese BBQ chicken - if you can find them use piri piri chillies, but if you can't get hold of them use regular chillies.
Ingredients
4 chicken legs
Sauce:
• 3 – 4 red large chilies
• 3 cloves garlic
• 1 tbsp sweet paprika (normal will do)
• 2 tbsp red wine vinegar
• Juice of 1 lemon
• ¼ cup olive oil
• 1 tsp sea salt
Instructions
Simply blend all the ingredients for the sauce in a blender until smooth. – done
Now you can marinade your chicken
Pour ½ of the sauce over the chicken and mix well
I personally like to keep the skin on as it keeps the meat juicy
I stab some slits in the chicken legs so that the marinade can sink in to flavor the meat better
I like to leave overnight to marinade, or 2 hours minimum
You can use chicken breast with this too, or even a whole chicken!

Notes
This does taste best cooked on a BBQ as you get the flavor of the coals and smoke but it can also be cooked on a griddle inside or even using the oven. Tip for doing this on the BBQ – you can part cook the chicken legs in the oven for 15– 20 mins first and then finish them off on the BBQ. This way you’ll know it’s cooked through and they wont all go up in flames as it has the skins on still.
