Mexican Slow Roast Pork

Ingredients
Meat:
2- 4 lb pork shoulder (pork butt)
Marinade:
Jalapenos in adobo sauce x 4
1 x serrano chilli
1 x red chilli
4 cloves garlic
2 large shallots
1 tsp paprika
1 tsp oregano
1 tsp salt and pinch pepper
2 tbsp honey
1 tbsp vinegar
1 cup water
2 tbsp sunflower oil to cook with
Instructions
Oven temp preheat – 220f / gas 2/ 140c
Blend all the marinade ingredients together with 1/4 cup of the water, blend until a smooth paste Heat 2 tbsp of sunflower oil in a pan and cook the marinade for about 7 – 10 minutes
Add a little more of the water if it looks like it’s drying out
Keep the heat low and stir to stop it sticking occasionally
Add the remainder of the water once cooked and stir together
Place your pork in a large tray and pour the marinade over
Cover with foil and place in the oven for approx 5 hours
Take foil off and put back in the oven for a further ½ hour to get some color
Pork will be ready once it begins to fall apart when pulled with a fork
Shred the meat up, pour any left over sauce over the pork and serve straight up
This dish does very well served with rice and beans or inside a taco
Notes
You could also make this dish in a slow cooker, exactly the same method, put pork in, pour over the cooked marinade and set to cook for 8 hours
