Lush Lamb Burgers with Caramelised red onions and Yoghurt Rahita

Ingredients

  • Lamb burger:
  • 1kg-minced lamb
  • 1 Red onion finely chopped
  • 50g roasted pine nuts
  • 2 tsp cinnamon
  • 2 tsp ground cumin
  • 1 tsp ground nutmeg
  • 1 egg
  • Pinch salt and pepper
  • 3 tbsp chopped flat leaf parsley

 

  • Caramelized red onions:
  • 4 large red onions sliced
  • 2 tbsp olive oil
  • Salt and pepper
  • 1 tbsp red wine vinegar

 

  • Yoghurt Dressing
  • 250g of natural yoghurt
  • 1 ½ tbsp chopped mint
  • 1 tbsp chopped flat leaf parsley
  • 1 clove garlic finely chopped
  • ¼ of a cucumber (2inch piece) finely chopped
  • Salt/ pepper
  • 1 tbsp caster sugar

Instructions

  1. Red Onions:
  2. Pre heat the oven to gas 5 or 190c / 375f
  3. Spread onions onto a large baking tray, sprinkle all the other ingredients over the top and pop in the oven for about ½ hour
  4. Give them a stir around half way through cooking time
  5. Leave in a bowl to cool and spread on top of lamb burgers

 

  1. Lamb burger
  2. Put all ingredients into a bowl and mix together with your hand or a big spoon
  3. Then shape into round balls and squash down into a burger shape
  4. These will taste best if left overnight, or you can just leave them for a couple of hours
  5. Cook on a griddle pan or even better the BBQ!

  2. Mix all ingredients together and serve on top of burgers with onions and a burger bun
