Lush Lamb Burgers with Caramelised red onions and Yoghurt Rahita

Ingredients
- Lamb burger:
- 1kg-minced lamb
- 1 Red onion finely chopped
- 50g roasted pine nuts
- 2 tsp cinnamon
- 2 tsp ground cumin
- 1 tsp ground nutmeg
- 1 egg
- Pinch salt and pepper
- 3 tbsp chopped flat leaf parsley
- Caramelized red onions:
- 4 large red onions sliced
- 2 tbsp olive oil
- Salt and pepper
- 1 tbsp red wine vinegar
- Yoghurt Dressing
- 250g of natural yoghurt
- 1 ½ tbsp chopped mint
- 1 tbsp chopped flat leaf parsley
- 1 clove garlic finely chopped
- ¼ of a cucumber (2inch piece) finely chopped
- Salt/ pepper
- 1 tbsp caster sugar
Instructions
- Red Onions:
- Pre heat the oven to gas 5 or 190c / 375f
- Spread onions onto a large baking tray, sprinkle all the other ingredients over the top and pop in the oven for about ½ hour
- Give them a stir around half way through cooking time
- Leave in a bowl to cool and spread on top of lamb burgers
- Lamb burger
- Put all ingredients into a bowl and mix together with your hand or a big spoon
- Then shape into round balls and squash down into a burger shape
- These will taste best if left overnight, or you can just leave them for a couple of hours
- Cook on a griddle pan or even better the BBQ!
- Mint Yoghurt Rahita
- Mix all ingredients together and serve on top of burgers with onions and a burger bun
