Haricot Vert with Toasted Almonds and Shallots

A beautiful way to serve French green beans at any time of the year but especially for something different and special for the holidays. You can easily make this a vegan recipe by using a plant based butter substitute. 

Ingredients

Serves 4

  • French green beans (haricot vert)

  • 3 shallots finely sliced 

  • 1 clove garlic

  • Zest of 1 lemon

  • Juice of 1/2 a lemon

  • 2 tbsp of butter

  • Salt and pepper

  • 1/2 cup slivered or sliced almonds 


Method:

Blanch the beans first in boiling water for 2 minutes, drain off the water and place under cool water to stop them cooking. 

In the same skillet add the butter and shallots and slowly cook them on a low heat until the shallots are softened.  Add the chopped garlic and almonds and slowly cook until the almonds are light brown.  Add the green beans, lemon zest and juice, season with salt and pepper and toss together.
