Who doesn't like a good plate of nachos every now and then! These are fully loaded ones with a beef sauce, salsa, cheese, sour cream - the works!
Ingredients
Spiced beef and bean sauce:
500g ground beef
1 small onion chopped
3 cloves garlic chopped
1 ½ tsp ground cumin
1 ½ tsp ground paprika
1 ½ tsp cayenne pepper
1 ½ tsp chilli powder
1 tsp oregano
½ can pureed tomatoes / sauce (not ketchup!)
1 can mixed beans
salt and pepper to season
½ tsp sugar
bag of round tortilla chips
Other ingredients:
Homemade Salsa:
2 big ripe tomatoes deseeded and chopped into small cubes
½ red onion chopped finely
1 clove garlic chopped finely
2 tbsp fresh coriander
juice 1 lime
½ can tomato sauce (not ketchup)
salt and pepper
½ tsp sugar
Toppings:
chopped jalapenos
sour cream
grated cheese
sliced jalapenos
fresh chunks of avocado x 1
Instructions
Start by making your beef sauce
Heat 2 tbsp olive oil in a large pan, add the chopped onions and garlic
Cook on a medium heat until they are soft, 1 – 2 minutes, add the ground beef and all the spices
Cook until the beef has browned all over, add the tomatoes, water, beans
Season with salt pepper and leave to simmer for 30 minutes on a low heat
If the mixture drys out you can add a couple of tablespoons of water
Once beef has cooked, turn heat off
Place one layer of tortilla chips on a baking tray or oven proof dish
Cover with spoons of beef and a handful of cheese
Repeat this until all you make a big enough heap, finish with cheese on top
If you like you can add the sour cream before it goes in the oven, that's personal preference
Place tray into a preheated oven for 5 – 8 minutes just so the cheese melts
Once melted, transfer nachos onto a serving plate or big bowl
Pile on the rest of your ingredients,fresh salsa, jalapeños, sour cream, avocado
Then get stuck in!
