Dhal to Keep You Warm

I really fancied something healthy and hearty to warm me up on this cold Septembers day, my dhal’s warming spiciness really hit the spot and due to popular demand on my Facebook page I just had to write down the recipe.
Ingredients
1 medium brown onion finely chopped
3 cloves garlic finely chopped
½ tin tomatoes
½ tsp turmeric
½ tsp cumin powder
½ tsp coriander powder
1 big tsp medium curry powder
1 cup / 200g red lentils
3 cups / 750ml vegetable or chicken stock
Handful fresh coriander
Large knob of ghee / butter / or vegan butter
2 tbsp sunflower oil
1 tsp Salt and pinch pepper
Instructions
Heat the oil in a pan and add the onions, garlic, turmeric, cumin, coriander, curry powder and tinned tomatoes
Leave to simmer and cook for 5 minutes, stirring occasionally
It’s important to let this cook well as it lets all the flavours develop
Next give your lentils a little rinse with water then add to the pan
Pour in the stock
Bring to the boil and leave to simmer gently for 25 minutes
Or until the liquid has all been soaked up and the lentils are nice and plump and soft
Once it’s cooked add in some fresh coriander (if you don’t like coriander you can leave out)
Add the butter (again this is optional) salt and pepper and your ready to serve. This will also taste better the next day!
