Chow Mein Noodles

This is a very quick and easy fried noodle dish.  I have written a basic recipe using just vegetables but you can add whatever you like in it. 

Ingredients

  • Sauce:

  • 2 tbsp Soy sauce

  • 2 tbsp Chinese rice wine

  • 2 tbsp oyster sauce

  • 1 dessert spoon cornflour

  • 1 dessert spoon sugar

 

  • Other Ingredients:

  • 6oz pack / 170g Chow mein dried egg noodles / or fresh 

  • 2 cups bean sprouts

  • 2 carrots finely sliced 

  • cabbage / bok choisliced

  • 1 brown onion finely sliced 

  • 4 cloves garlic finely chopped

  • 2 tbsp vegetable oil

  • 2 tsp sesame oil

  • ¼ cup water

  • 1 tsp white pepper

 

Method:

Start by making sure all your ingredients are cleaned and chopped ready to cook.  If you have dried noodles soak them in hot water until they are just soft and then run under a cold tap to stop them cooking any further.  I like to drizzle half a tablespoon of vegetable oil over them to stop them from sticking.

Mix all the ingredients for the sauce together in a small bowl until smooth. 

Once you are ready to cook simply heat the oil's in a large pan.  Add the garlic first, then carrots and onions.  Stir fry for a minute, then add the chopped bok choi and give that a stir in.  Next add the noodles and water, and pour the sauce over the top.  Quickly keep stir frying so that all the noodles are covered in the sauce and it starts to thicken up. Lastly add in the bean sprouts and the white pepper.

Serve piping hot as a wonderful side dish, or you can even add extra protein like chicken, prawns, pork, beef or whatever you fancy to make this a more filling meal.
