Chocolate Cherry Cupcake

This is such an easy way to make yummy cupcakes. You just mix it all in a pan and away you go. Perfect for making as a special treat. This is one of my favourite recipes from Nigella Lawson, I just had to show you!

  • Ingredients

  • 50g self-raising Flour

  • 125g Butter unsalted

  • 150g caster sugar

  • 100g dark Chocolate

  • 300g cherry Jam

  • 2 large Eggs lightly beaten

  • Pinch of salt

 

  • Icing

  • 100g Dark chocolate

  • 100ml ½ cup double Cream

 

  • Equipment:

  • Muffin tin and cases

Instructions

  1. Pre heat oven to gas 4 / 180 c

  2. Heat the butter in a saucepan, when it has almost all melted turn the heat off and add the chocolate

  3. Stir until the chocolate has melted

  4. Add the jam, eggs, sugar and salt

  5. Beat with a spoon until all mixed together, then sift in the flour and fold together

  6. Spoon mixture into the muffin cases until they are about half full

  7. Pop straight into the oven for 20 -25 minutes

  8. To test if they are ready they should be springy when you touch them, they bounce back when you push the top

  9. Or you can poke a thin skewer into the cake and if it comes out clean, without any gooey mixture on then they are ready

  10. Leave them to cool on a wire rack then make the icing

  11. Icing:

  12. Break the dark chocolate into a saucepan; add the cream the heat gently

  13. Stirring all the time until it starts to go shiny and thick

  14. Take off the heat then spread the icing on top of your cakes and decorate away
