Ingredients

  • 2 tbsp Chilli paste

  • 2 tbsp Crispy fried shallots

  • 2 poached Egg

  • 2 tbsp Spring onions finely sliced

  • 2 x portions Fresh noodles (or you can used dried or even instant!)

 

  • For the ground meat:

  • 2 cloves garlic chopped

  • 250g minced pork / chicken / turkey

  • dash sunflower oil / sesame oil

  • sprinkle white pepper

  • 1 tbsp dark soy sauce

  • 1 tsp honey

  • 1 tbsp rice wine / or sherry / bourbon

Instructions

  1. Start by cooking the minced pork, heat the oil in a pan

  2. Add the garlic, white pepper and minced pork

  3. Cook for 5 minutes or until it’s all nearly cooked

  4. Add the soy sauce, honey and splash of rice wine

  5. Cook for a further 2 minutes

 

  1. Poach your eggs:

  2. Using a deep frying pan fill with water and heat until nearly boiling, turn to a gentle simmer

  3. Add a dash of vinegar, crack an egg in and leave it poach for about 3 minutes

  4. Scoop out and set aside

 

  1. Add the noodles to same water and leave to soften for 1 minute

  2. If using dried noodles it’ll take a bit longer

  3. Once the noodles are ready, drain and add to a bowls

  4. Add a bit of each topping on top, spring onions, minced pork, chili, crispy onions and the poached egg on top
