Ingredients
2 tbsp Chilli paste
2 tbsp Crispy fried shallots
2 poached Egg
2 tbsp Spring onions finely sliced
2 x portions Fresh noodles (or you can used dried or even instant!)
For the ground meat:
2 cloves garlic chopped
250g minced pork / chicken / turkey
dash sunflower oil / sesame oil
sprinkle white pepper
1 tbsp dark soy sauce
1 tsp honey
1 tbsp rice wine / or sherry / bourbon
Instructions
Start by cooking the minced pork, heat the oil in a pan
Add the garlic, white pepper and minced pork
Cook for 5 minutes or until it’s all nearly cooked
Add the soy sauce, honey and splash of rice wine
Cook for a further 2 minutes
Poach your eggs:
Using a deep frying pan fill with water and heat until nearly boiling, turn to a gentle simmer
Add a dash of vinegar, crack an egg in and leave it poach for about 3 minutes
Scoop out and set aside
Add the noodles to same water and leave to soften for 1 minute
If using dried noodles it’ll take a bit longer
Once the noodles are ready, drain and add to a bowls
Add a bit of each topping on top, spring onions, minced pork, chili, crispy onions and the poached egg on top
