Carne Asada Fries

Ingredients:

Serves 4

Steak Marinade:

1/2 cup Orange juice

1/2 cup Lime juice

2 cloves Garlic crushed

1 tsp dried oregano

1 tsp Cumin powder

2 Lbs Flank steak 

Cilantro sauce:

2 cups Fresh cilantro

1 cup chopped fresh Jalapeños 

1/2 cup lime juice

2 cloves fresh garlic

1/2 cup Olive oil

1/4 cup brown sugar / honey

1/4 cup White wine vinegar

1/4 cup mayo / sour cream 

Salt / pepper

Extra toppings:

Shredded cheese

Pico de Gallo

Guacamole

3lbs of fries, fresh fried are always best but you can use frozen oven fries to save time and calories and it will still taste amazing. If using fresh potatoes I like russets or kennebecs. 

Method:

Mix all ingredients together for the marinade, add the steak and leave for 2 hours or over night is best.  The citrus tenderizes the meat. 

If using fresh potatoes, peel and slice into fries, soak in water and drain and dry off.  Heat sunflower in a large deep pan to 325f and carefully place fries in the oil and cook for 3-4 minutes until they are just soft.  Take out and place on a tray to cool down.  When you’re ready to eat turn the oil heat up to 375f and place the pre cooked fries in the oil and cook for a further 4-5 minutes until golden and crispy. 

Cook the steak for 3-4 minutes each side until medium rare, and leave to rest. Slice and dice the steak. 

The cilantro sauce is optional, but just add everything to a blender and blitz until smooth. 

Add the cooked and crispy fries to a baking tray, cover with cheese, and pop under a grill to melt the cheese, you can also cook your diced steak a bit more depending on how to like it cooked.  Then load them up with sour cream, pico de Gallo and guacamole or whatever your favorite toppings are. Serve straight away.
