Brown Stew Chicken to Warm your Cockles

This is a wonderful recipe for the cold winter months to warm your cockles! One pot stews are great as you just shove all the ingredients in and hey presto you have dinner to snuggle down to.
Ingredients
1 onions chopped
1 tin aduki / kidney beans
1 tin chopped tomatoes
2 big carrots peeled and chopped
3 garlic cloves chopped
2 tsp curry powder
1 tbsp fresh thyme or 1 tsp dried thyme
6 chicken thighs
½ tsp chili powder (or 1 scotch bonnet if you like it hot)
1 tsp all spice
I large sweet potato washed and chopped with skin on
2 big potatoes cut into big halves.
2 tbsp olive oil
2 tsp cornflour mixed with a little cold water - optional
Instructions
Heat oil in a pan, add the onion and garlic and cook for 2 minutes
Add all the spices – curry powder, all spice, chili, thyme
Fry for a further 2 minutes then add the chicken and stir
Cook for another 2 minutes then add the tinned tomatoes, aduki beans and chopped sweet potatoes and new potatoes
Add enough water so that the ingredients are covered and bring to the boil
Add some seasoning - salt and pepper
Leave to simmer with a lid half on for 30 -40 minutes or until the chicken is cooked
(If you like your sauce thicker, add in the cornflour mixture and leave to simmer for a further 5 minutes and it will thicken it up.)
Serve with cooked brown rice as it's healthier
