I'm a fan of kale, it's good for you and very tasty if cooked right. This recipe the kale is raw so you'll be getting the most nutrients out of it, and I massage the kale in the dressing to make it softer and easier to digest.
Ingredients
Salad:
3 spring onions, finely chopped
2 tbsp coriander chopped
2 tbsp mint chopped
2 tbsp dried fried onions
2 tbsp toasted sesame seeds
1 bunch of kale finely sliced (approx 8 – 10 leaves)
Dressing:
Juice of 1 fresh lime
1 tbsp fish sauce (leave out for vegetarians and vegans)
1 tsp sesame oil
1 1⁄2 tbsp olive oil
1 tbsp fresh ginger finely chopped
1 tbsp honey/ agave syrup
Pinch salt and pepper
Instructions
Put the shredded kale into a large bowl
Mix all the dressing ingredients together and pour over the top
I like to massage and squeeze the kale with the dressing to soften it up
After the dressing has been added you can leave this in the fridge to finish off later
Or eat straight away and add the rest of the ingredients
Toss kale with the spring onions, coriander, mint and sesame seeds
dish up and sprinkle with crispy onions on top.
