Spam Fried Rice

I don’t normally eat canned meat, but I did a special “canned food” cooking show for Tastemade and the viewers voted for me to make this! Fried rice is a leftover dish.  You can add whatever ingredients you like, and it’s always best made with cold rice.  This recipe is the only time I’ve ever had Spam, and it was made for me a long time ago by my Singaporean friend’s grandma.  It was delicious I have to say!  If you’re not a spam fan then use ham, or bacon or chicken or whatever you like. 

Ingredients

Serves 2

  • 4 cups of cold cooked rice

  • 2 large cloves of garlic crushed

  • 2 cups of chopped green beans

  • ½ a can of spam chopped into small cubes

  • 1 tsp fish sauce

  • 3 spring onions finely chopped

  • 2 eggs

  • 2 tbsp vegetable oil (or canola, sunflower, peanut oil)

To serve

Crunchy garlic chili oil and fresh sliced green onions

Method:

  1. Firstly get all your ingredients chopped and ready to cook.  Beat eggs in a small bowl, and make sure the cold rice is broken up with a fork.   When you start cooking you will need to be quick!

  2. Heat oil in a wok or large frying pan. When you see it starting to smoke add the garlic and chopped green beans, then the chopped spam and half the chopped spring onions.  Stir fry until the spam gets a bit golden.

  3. Next, add the cold rice and fish sauce and stir together for a minute.  

  4. Push rice to one side and pour the beaten eggs into the space.  Let settle and cook for a few seconds then stir it into the rice and continue to cook until eggs and rice are hot and cooked through.

  5. Serve up with a sprinkle of fresh chopped green onions, a sprinkle of white pepper preferably, or black is fine, and some chili paste or sauce!
