Learn how to make the Italian Classic Carbonara for an easy and quick meal. This is the real Italian Carbonara – no added cream!
Ingredients
- 200g Spaghetti
- 100g pancetta / guanicale / or bacon lardons
- Olive oil
- Black ground pepper
- 2 large eggs
- 3 tbsp Pecorino Romano
- 1 1/2 tbsp Parmesan
Instructions
- Heat a large pan full of water to cook the spaghetti
- Add a pinch of salt and when the water is boiling add the spaghetti and cook for 10 minutes
- Or until cooked al dente
- While the pasta is cooking, heat a little olive oil in a frying pan
- Cook the pancetta on a low heat until crispy, about 4- 5 minutes
- In a large bowl whisk the eggs, 2 tbsp of the Pecorino and 1 tbsp of Parmesan with a big pinch of ground black pepper
- Drain the spaghetti saving some of the water
- Put straight into the bowl with the eggs and slowly mix together
- The eggs will cook with the heat of the pasta and will make a sauce
- Add the remaining pecorino and parmesan, the pancetta, and a little of the hot water from the pasta to make a bit more sauce
- Serve straight away!
