Pumpkin Pie Pancakes

If you like fluffy pancakes, you'll love these special pumpkin ones around Thanksgiving or the fall.

Ingredients

  • 1 ½ cups Plain flour

  • ½ tsp baking soda

  • ½ tsp baking powder

  • 2 eggs

  • ¼ cup brown sugar

  • ½ can pumpkin puree

  • 1 tsp pumpkin pie spice mix (allspice, cinnamon, nutmeg, cloves?)

  • ½ cup milk

  • pinch salt

 

  • To serve

  • 3 tbsp Mascarpone whipped with 2 tbsp cream until fluffy

  • Maple syrup

  • Chopped roasted pecans – optional

Instructions

  1. Using a large bowl, add the flour, baking soda and powder, salt and spices, and sugar

  2. Whisk together

  3. Make a well in the center and crack your eggs in

  4. Add the milk and whisk together until a smooth batter is formed

  5. Add the pumpkin puree and whisk in

  6. Leave to stand for 5 minutes

  7. These are now ready to cook

  8. I always like to use a little bit of butter in my frying pan or hot plate as it adds a good flavor

  9. Spoon a dollop of the mixture on to the pan, spread out to a circle shape

  10. The pan should be on a medium to low heat

  11. Cook one side for about 1 minute or until it has set and turned slightly golden

  12. Then flip it and continue to cook until the batter has cooked all the way through

  13. and the pancakes are fluffy

  14. Keep going until you have used all your mixture up and serve warm with a dollop of whipped mascarpone and cream, or just cream and lashings of maple syrup…
