David Hoffmann from davidsbeenhere.com was on his way back from Sri Lanka on his latest adventure and he stopped off at mine as he was in London and he came over and showed me his Grandmothers pasta recipe – yummy!
Ingredients
- 300ml tub double cream
- 250g bacon
- 1 brown onion chopped finely
- 300 g penne pasta
- water to cook pasta in
- salt and pepper to season
- Dash oil
- Equipment:
- Frying pan
- Large saucepan
- Colander
Instructions
- Cook bacon in a frying pan with a little oil until it turns golden brown and crispy
- Add the onions and cook until soft, about another 2 minutes
- Get a pan of boiling water ready to cook your pasta
- You can put your pasta in the water the same time as you put the cream in the bacon as they will take about the same time to cook
- Next pour in the cream and leave to simmer gently for about 5 – 7 minutes
- At the same time add your pasta to the boiling water
- The cream will turn a lovely golden color, but you don’t want it to evaporate too much
- Drain the pasta when it is cooked al dente, that just means that it still has a slight hard bite in the middle and not completely soft all the way through
- Return the pasta to the sauce pan and put onto a low heat
- Pour the sauce over the pasta and stir in whilst it’s on the heat
- This helps the sauce to absorb better into the pasta
- Season with black pepper and a pinch of salt
- Serve straight away
- David also suggested you can add some parmesan cheese at the end too if you like!
