A simple and refreshing key lime pie recipe that is super easy to make.
Ingredients
Base / Crust
200g digestives or graham crackers
100g melted butter
Filling
1 tin condensed milk 397g
Juice of 4 large limes ½ cup (key limes if you can get them)
Zest of 2 limes
3 egg yolks
Topping
Whipped cream to serve
extra lime slices
Instructions
Pre-heat the oven to gas 6 / 200c / 390F
Start by making the base
You will need a 9-inch spring form tin
Crush the digestives until they become fine crumbs - use a food processor
Add the melted butter and mix together
Push biscuit mixture into the bottom of the tin firmly
Set aside
To make the filling, simply add all the left over ingredients into a bowl and beat together
Pour mixture on top of the base and then pop in the oven for 8-10 minutes
It doesn’t take long to set in the oven
Take out and leave it to cool
Once cooled, put in the fridge for 4 hours or until cold
Once chilled cover the top with whipped cream and decorate with a few slices of lime

If you want a really thick pie just double the ingredients
