Crispy Belly Pork and Sweet Soy Dipping Sauce

Ingredients
- 1kg piece of pork belly
- 2 tsp five spice powder
- 2 tsp salt
- Dipping sauce
- 3 tbsp light soy sauce
- 1 tsp freshly grated ginger
- 1 tbsp sweet chili sauce
Instructions
- Start by getting a sharp knife and scoring the top of the fat in a criss-cross pattern
- (That just means cut the fat)
- Next rub the five spice and salt all over the fat and underside of the pork
- It is best to leave uncovered in the fridge over night, but a couple of hours will do if you don’t have time
- This helps it to dry out and become crispier
- Preheat the oven to its hottest setting
- Put the Pork on a rack fat side up and put in the oven for 10 minutes
- Then turn heat down to 180c/ gas 4 and leave to cook for a further 1 hour and 30 minutes
- If the fat is not crispy by then you can place it under the grill to give it an extra blast
- You will see the fat bubbling up and going crispier
- Make sure if you do that to keep an eye on it in case it burns
- To make the dipping sauce, simply mix all the ingredients together
- Serve this with the crispy pork and some steamed rice
- Delicious!
