This is my budget friendly recipe is from Top Chef, season 7, episode 1, Chef Angelo Sosa. It’s a really fun way to make basic ingredients a bit more fancy and tasty. So if your strapped for cash and want to impress someone with your cooking this will be perfect! The Spiced onion jam really adds a bit of flare to the chicken and potatoes and it compliments each other so well.

Ingredients

  • 2 chicken thighs (de boned)
  • 1 tsp cumin powder
  • 1 Tsp salt

 

  • Potato Noodles:
  • 1 large potato, julienned (8 oz)
  • 2 Tbsp butter / 50g
  • 4 oz vegetable stock
  • Salt and pepper, to taste

 

  • Curried Onion Jam:
  • 1 medium brown onion
  • 2 tbps sugar
  • 1 tsp curry spice mix
  • 4 tbsp Japanese rice vinegar (or cider / white wine vinegar)
  • 1 tbsp oil

Instructions

  1. For the Chicken:
  2. Season the chicken with the cumin and salt
  3. Marinade for 15 to 20 minutes
  4. Sauté until cooked with grapeseed oil

 

  1. For the Potato Noodles:
  2. In a pan over gentle heat, combine julienned potatoes, butter, vegetable stock, salt, and pepper
  3. Glaze potatoes until cooked and season to taste
  4. They will only take about 5 minutes to cook through as they are so thin
  5. Be careful not to over cook them as you will end up with mashed potato!

 

  1. For the Curry Onion Jam:
  2. In a pan over low heat, sweat onions, sugar, and curry spice in oil until soft
  3. Deglaze with vinegar and season with salt
  4. Keep simmering the jam until it becomes thick and caramelised and the consistency of jam

 

  1. To Plate:
  2. Place potatoes onto plate
  3. Arrange chicken thigh pieces
  4. Top with onion jam
  5. Drizzle with oil and a little garnish of coriander tastes wonderful with this dish
