Hot, spicy, sweet and smokey BBQ sauce recipe. This is a replica recipe of the BBQ Sauce that we made on BBC America's Chef Race when I was in Memphis. We won the BBQ sauce challenge I'm very proud to say.
Ingredients
½ pint/ 1 1/2 cups/ 300ml tomato ketchup
juice of 1 lemon
1 tbsp balsamic vinegar
½ tsp smoked hickory powder / or smoked paprika
1 tsp smoked salt
1 tsp onion powder
1 1/2 tbsp molasses (or dark brown sugar)
1 tbsp treacle
1 tbsp chipotle powder (or use chilli powder if cannot find chipotle)
A few sprigs of fresh thyme (or 1/2 tsp dried thyme)
2 cloves smashed garlic (or ½ tsp garlic powder)
Instructions
Mix all ingredients together in a sauce pan
Bring to the boil and then leave to simmer for 2-3 minutes gently
Turn off heat and leave to cool down
I like to leave the garlic cloves whole and then pick them out before serving
This just let’s the flavor of the garlic infuse into the sauce
This recipe makes a thick sauce and you can always thin it down with a bit of water or stock
It goes very well with chicken, fish, pork and beef
