Bad Ass BBQ Sauce Recipe

Hot, spicy, sweet and smokey BBQ sauce recipe. This is a replica recipe of the BBQ Sauce that we made on BBC America's Chef Race when I was in Memphis. We won the BBQ sauce challenge I'm very proud to say.

Ingredients

  • ½ pint/ 1 1/2 cups/ 300ml tomato ketchup

  • juice of 1 lemon

  • 1 tbsp balsamic vinegar

  • ½ tsp smoked hickory powder / or smoked paprika

  • 1 tsp smoked salt

  • 1 tsp onion powder

  • 1 1/2 tbsp molasses (or dark brown sugar)

  • 1 tbsp treacle

  • 1 tbsp chipotle powder (or use chilli powder if cannot find chipotle)

  • A few sprigs of fresh thyme (or 1/2 tsp dried thyme)

  • 2 cloves smashed garlic (or ½ tsp garlic powder)

Instructions

  1. Mix all ingredients together in a sauce pan

  2. Bring to the boil and then leave to simmer for 2-3 minutes gently

  3. Turn off heat and leave to cool down

  4. I like to leave the garlic cloves whole and then pick them out before serving

  5. This just let’s the flavor of the garlic infuse into the sauce

  6. This recipe makes a thick sauce and you can always thin it down with a bit of water or stock

  7. It goes very well with chicken, fish, pork and beef
